Super Nachos Recipe
This recipe for Super Nachos is perfect for game day or when just having some friends over. These Nachos can be a different meal to use up the rest of the refried beans after making a pressure cooker pot of pinto beans for chili, burritos or bean dip. You might also want Guacamole Recipe
1 lb ground beef
½ cup salsa
1 teaspoon chili powder
16 oz or 2 cups Refried Beans
8 oz grated cheese
sour cream
salsa
tortilla chips
guacamole
jalapenos
Heat oven to 350. Cook beef and rinse under hot water through colander to remove grease. Return meat to pan and add ½ cup salsa with 1 teaspoon chili powder and only just enough water to keep from sticking and simmer uncovered for 5 to 10 minutes.
Meanwhile, lightly oil a 15x10 pan and line bottom with tortilla chips. Drop spoonfuls of beans on chips then follow with the meat. Cover with the cheese and bake about 10 minutes for cheese to melt. Use spatula to move to serving platter.
Top with guacamole and sour cream or serve them on the side with the salsa and jalapenos.
If you don't have chips on hand, just cut a few tortillas in half and then cut each of those tortilla halves into thirds, which makes the small triangles. Then drop a few tortilla pieces at a time into about 1/2 inch of hot oil fry for a few minutes. Drain on paper towels.
