Chicken and Angel Hair Pasta

This recipe for Chicken and Angel Hair Pasta goes really well with Herb Bread.

2 lbs boneless skinless chicken breast in 1” cubes
3 tbls oil
3 clove minced garlic
8 oz sliced mushrooms
1 sliced onion
1 cup broccoli florets
2 Roma tomatoes chopped
3 sprigs parsley
1 tsp dried basil
¼ cup Parmesan
1 cup chicken broth
12 oz angel hair pasta

Begin heating water to cook pasta in deep pot. Heat the oil in skillet over medium heat and cook a portion of chicken at a time and set aside cooked chicken in a bowl.

Add a little more oil to skillet if needed and begin to sauté the mushrooms with the garlic, onions and broccoli for 5 to 6 minutes.

Begin to cook the pasta in the pot of water. While the pasta cooks, return chicken to the pan with the mushroom mixture, and add the chicken broth, tomatoes, parsley, basil and Parmesan to the mushroom mixture. Simmer for 2 -3 minutes and then mix 2 tbls of cornstarch and 2 tbls of water in a small bowl and stir in to thicken.

Drain pasta and put in large serving bowl. Top with chicken and vegetable mixture.
